Spruce Up Your Family Dinner With Carrot Cupcakes

At some point in your life, you will run out of ideas on what to cook for your family. There will come a time when you would lose interest in cooking and feel that the family dinner is getting boring, if not for the usual fun chitchat that you share with your beloved spouse and kids. Who would have thought that cream cheese and white chocolate will taste so good together? You will not believe otherwise once you have tasted this great dessert, which is a very moist and light carrot muffin that is not too sweet or too greasy like most carrot pastries.

To do this, you need to preheat the oven to 350 degrees F and grease lightly 12 muffin cups. In a small saucepan, melt 2 ounces white chocolate on low heat. Stir the mixture until smooth. Allow this mixture to cool to room temperature. In a bowl, beat 8 ounce package cream cheese and ½ cup unsalted butter until smooth. Mix in the white chocolate you have melted earlier together with 1 teaspoon vanilla extract and 1/2 teaspoon orange extract.

Gradually beat in 4 cups of confectioner's sugar. Do this until the mixture gets a fluffy texture. Then mix in 2 tablespoons of heavy cream. Beat 2 eggs into the mixture along with 1 1/8 cups white sugar, 1/3 cup brown sugar, ½ cup vegetable oil, and 1 teaspoon vanilla extract. Fold in 2 cups of shredded carrots and ½ cup of crushed pineapple.

Get a separate bowl where you will mix 1 1/2 cups all-purpose flour, 1 1/4 teaspoons baking soda, 1/2 teaspoon salt, 1 1/2 teaspoons ground cinnamon, 1/2 teaspoon ground nutmeg, and 1/4 teaspoon ground ginger. Combine the flour mixture into the carrot mixture until it is even. After this, fold in ½ cup of chopped walnuts. Transfer the mixture into the muffin cups. Bake the muffins in the preheated oven for 25 minutes. Use a toothpick to see if the muffin is already good. Cool the muffin on the wire racks then top with whipped cream and sprinkle with chopped walnuts.
