Keith's 1001 Cocktails: Sparkling Strawberry Mimosa


Keith's 1001 Cocktail's


In honor or International Woman's Day Keith is sharing with us a Sparkling drink: The Sparkling Strawberry Mimosa. March 8th is when Woman's Day is celebrated and in Europe it's celebrated by offering women a mimosa flower, either it be from a friend, a boyfriend, a brother etc... And what better way can keith choose to celebrate other than with a Mimosa cocktail. This isn't your usual Mimosa cocktail with champagne and orange juice but a touch of sweet strawberries takes over.




Sparkling Strawberry Mimosa

2 ounces frozen sliced California Strawberries in syrup, partially thawed
2 ounces chilled champagne
Whole fresh California Strawberry
Orange slice
  1. In a blender combine sliced berries and juice; blend smooth.
  2. Pour into stemmed glass over ice. Fill with champagne; garnish with whole berry and orange slice.

Makes 1 serving.

Nonalcoholic Version: Substitute sparkling water and squeeze of lemon juice for champagne.

Being that the Social Network has been nominated for 25 Oscars, I decided to do some research on recipes which inspire the movie and feature them as " The Social Network Oscar Party". The Apple Martini was inspired by Mark Zuckerberg's dinner with Napster founder Sean Parker and for the appetizer simply because it's Mark Zuckerberg's favorite food. Finally the baby eggplants go very well with red snapper. Why the red snapper since The Red Crush Granite seems to be the in cocktail related to the movie I thought red snapper would be a great substitute and the delicious eggplants easily compliment this dish.

  • ice cubes
  • 2 cups sweet-and-sour mix
  • 1 1/2 cups vodka
  • 1 1/2 cups sweet and sour apple schnapps
  • 1 Granny Smith apple, sliced (optional)

  • Fill pitcher halfway with ice cubes. Add sweet-and-sour mix, vodka and Sour Apple Pucker and stir well to combine. Push apple slices onto rims of Martini glasses, if desired. Strain mixture into Martini glasses and serve immediately.

    Recipe Ingredients

      • 1 slow-cooker liner (we used Reynolds)
      • 1/4 cup packed brown sugar
      • 2 Tbsp each paprika and dried minced onion
      • 1 1/2 tsp salt-free chili powder
      • 1 1/2 tsp salt
      • 1/2 tsp garlic powder
      • 1/2 tsp allspice (optional)
      • 4 lb bone-in pork shoulder roast
      • 3/4 cup apple cider vinegar
      • 1/2 cup sliced scallions
      • 24 small dinner rolls, split
      • Accompaniments: hot pepper sauce, coleslaw

    Recipe Preparation

      1. Line a 4-qt or larger slow-cooker with liner. Mix 1 Tbsp of the brown sugar, the paprika, minced onion, chili powder, salt, garlic powder and allspice. Sprinkle 1 Tbsp into bottom of slow-cooker. Rub remaining mixture over pork. Add vinegar and remaining brown sugar to slow-cooker; stir to mix. Add pork.

      2. Cover and cook on low 8 to 10 hours until pork is fork-tender. Remove pork to cutting board and pull into shreds. Return to slow-cooker; add scallions and toss to coat.

      3. Put about 1/4 cup onto each bun bottom. Top with bun tops










    Sauteed Baby Eggplants Source: Epicurious

    Serve These eggplants with Steamed Red Snapper


    Ingredients

    • 1 pound baby eggplants (6), trimmed and halved lengthwise
    • 1 teaspoon kosher salt
    • 2 tablespoons soy sauce
    • 2 tablespoons mirin* (Japanese sweet rice wine)
    • 1 1/2 tablespoons vegetable oil

    Peel a 1-inch-wide strip of skin lengthwise from each eggplant half opposite cut side. Sprinkle eggplants with salt on both sides and let drain on a rack set over a shallow baking pan 20 minutes. Rinse eggplants well, then firmly squeeze out moisture and pat dry with paper towels.

    Stir together soy sauce and mirin in a small bowl.

    Heat oil in a 12-inch heavy nonstick skillet over moderate heat until hot but not smoking, then fry eggplants, peeled sides down, until undersides are browned, 5 to 6 minutes.

    Turn over and brush with soy mixture. Fry eggplants until tender, 4 to 6 minutes more, then add remaining soy mixture to skillet and cook, turning eggplants once or twice, until liquid is absorbed, about 2 minutes.

    1001 Cocktails: The American Dream Cocktail


    Our cocktail editor Keith Somers wants to share with our friends and readers a President's Day cocktail with a twist of red white and blue: The American Dream Cocktail



    American Dream Drink Recipe


    1 oz. PAMA Pomegranate Liqueur
    1 oz. black cherry rum
    1 1/2 oz. Pom Wonderful pomegranate cherry juice
    1 1/2 oz. fresh sour mix (2 parts simple syrup, 2 parts lemon juice, 1 part lime juice)
    Blueberries and white fondant stars for garnish

    Cut mini stars out of white fondant. Wet the back of each star and press into the inside of a cocktail glass so it sticks, then let sit for about 5 minutes. Fill a mixing glass with all ingredients add ice , shake and strain into glass. Garnish with blueberries on a pick if desired.

    Pear Cocktail


    Ingredients:

    • 20z. Dekuyper Harvest Pear Schnapps
    • Sweet Sour Mix
    • 1 oz. Cherry Juice


    Instructions:

    Add ingredients to cocktail shaker with ice and shake well. Pour into cocktail glass or flute and garnish with a thin pear slice.
