Delicious Cheesecake Recipes: Nut Crusted Amaretto Cheesecake

Amaretto is sweet and flavorful almond liqueur with a base extracted from the pit seeds of apricots or almonds. It has been around for quite some time. It is exported from Italy and many people use it for making mixed drinks. However, it is also a wonderful ingredient to use while baking and cooking different types of dishes, including desserts.

The almond flavored ingredient has a delicious flavor that is sweet and nutty. You can use amaretto flavoring as a substitute for almond flavoring.

Recipe for Nut Crusted Amaretto Cheesecake

What You Need

  • 2/3 cup flour

  • 3 Tablespoon sugar

  • 2/3 cup ground almonds

  • 1 teaspoon cinnamon

  • 4 Tablespoons cubed butter or margarine

  • 2 packages softened cream cheese 8 ounce

  • 1 cup sugar

  • 4 eggs

  • 1 cup sour cream

  • 4 teaspoons vanilla flavoring

  • ¼ teaspoon salt

  • ¼ cup amaretto

  • ¼ cup brandy or cognac

  • 1 ½ teaspoons almond flavoring

  • 1 ½ cups sour cream

  • 4 Tablespoons sugar

  • 1 teaspoon vanilla flavoring

  • 2 Tablespoons unsweetened cocoa

How to Make It

Place the cream cheese out onto the kitchen counter about 20 minutes before preparation time to soften the cheese in order to make the recipe.

Preheat the oven to 350 degrees Fahrenheit.

Using a food processor you will add and then process the flour, 3 tablespoons sugar, ground almonds, cinnamon and butter or margarine. Process until the mixture reaches the consistency of fine crumbs. Press this mixture into the bottom and along the sides of a 9 inch spring form pan. Bake in the preheated oven for 15 to 20 minutes. Remove from oven and allow the crust to completely cool.

Preheat your oven to 275 degrees Fahrenheit.

Using a large mixing bowl and an electric mixer you will add the cream cheese and then beat until smooth and creamy. Add the sugar and continue beating until well blended. Add the eggs one at a time while beating well after each. Add the sour cream, vanilla flavoring, salt, amaretto, brandy or cognac and almond flavoring. Mix to combine. Pour this cream cheese filling into the cooled crust. Bake in preheated oven for about 135 minutes or 2 hours and 15 minutes. Remove from oven. Loosen the sides of the cheesecake by running a butter knife along the edges of the pan. Allow the dessert to cool to room temperature and then refrigerate to chill overnight or for at least 6 hours.

When you are ready to complete the recipe, preheat the oven to 450 degrees Fahrenheit.

Make the chocolate frosting by adding the remaining 1 ½ cups sour cream, 4 Tablespoons sugar, 1 teaspoon vanilla flavoring, and 2 Tablespoons unsweetened cocoa into a medium size bowl and then whisking the ingredients together. Spread this chocolate frosting mixture evenly over the amaretto cheesecake and then bake in the preheated oven for about 7 minutes. However, keep an eye on the dessert to prevent unnecessary browning and burning which will cause the chocolate frosting to become too hard. Allow this dessert to cool for at least 2 to 3 hours before cutting and serving.
